Metis is needed only for parallel computation so for a first attempt if you just use the sequential mode, you could jump over.
When the sequential mode will be ok, you could look more in detail the metis compilation

I tried to run compileTELEMAC.py but it does not finish. I guess the problem is the GFortran compile since it can not find one. I searched the web for it and could not find a GFortran compiler for Mac 10.13.
Is there a workaround?

You should have a compiler on your computer otherwise it's impossible to compile Telemac.
Gfortran is the default solution because it's a free open source compiler. It comes from Linux but run on Windows. As Mac OS is based on Linux (as far as I know) it's strange that it doesn't work on Mac OS.
A quick search on the web indicate that gcc is available for Mac so I think you could use it (it usually contains gfrotran)

The compiler is on my Mac, but since I use the ubuntu config file I guess the locations are different so that the compiler is not found.

You should adapt the config file to your own configuration...
This task couldn't be done automatically.
