What would be the best way to return the volume of a river domain as an additional variable in the results file? The User manual states that this can be done by programming in the NOMVAR-TELEMAC2D and PRERES_TELEMAC2D routines, but I'm unsure as to the best way to go about it. I don't need the volumes of each element per say, but rather the integrated volume over the domain at each time step.

If it is a single value, it is not very convenient to give it in the results file, you should better put the subroutiner bilan.f from telemac2d library in your Fortran file and change it so that you can print in a file the value MASSE2 which is the total mass of the domain. bilan.f is called at every time step.
